I love the theme this week because it’s Fish! And i have couple of fish pictures in my file and even some dishes made of fish.

–fishes to be marinated and then to be grilled–

–the grilled ones–

–every Filipino’s delight. fish meat combined with the mixture of vinegar and lemon etracts and lots of garlic, onions, ginger, spring onions. It’s optional to add diced cucumber and raddish.

My favorite of all BBQ’s is chicken. Though beef is also delicious but nothing is much common around here in my hometown except for the chicken barbeque.

I grabbed this picture from the internet but the chicken barbeque am talking about is much like this except that they are bigger portions and they are on a stick. If eaten in a native restaurant they are usually served in a babana laden native plate and with a side dish of pickled papaya. Chicken BBQ is one of my favorite philippine delicacy which is commonly known as Chicken Inasal.
Favorite all year round food of Filipinos.
I cannot think of anything fitted to the theme except for
FRUIT PUNCH.
How to do:
1. Use any commercialized juice powder but I prefer pomelo or strawberry.
2. Shred some green mangoes or green apples.
3. Cubed finely some yellow mangoes and red apples.
4. Liquify the powder in a big punch bowl and mix in the diced fruits. Add some ice and presto you got a yummy cool fruity juice. ( i prefer no commercialized sugar for health purposes. the fruits added can add the healthy sweet taste)
My favorite is mushroom soup with low salt for taste. I can have this soup anytime with my meal. Although if we use this at home daily is an expensive thing to do, but I make this soup as a treat for my family at least once or twice a month.

I love cakes! Especially chocolate cakes. Even if one will say it does not taste so nice and yummy, but to me, any cake with color brown or as shown in the picture — they always make me drooling. In my mind, chocolate cake is sooo sweet and yummy that it it is ok for me not to each anything afterwards.
By the way this picture of the fudge was taken last year when I joined an EB with my kuro pals. I bought the whole box for them but I guess they don’t have much sweet tooth or maybe was just shy that I end up eating several pieces of them. hehehehe

My choice this time is vegetarian one.
I love tofu. What I will be sharing here is not my own made recipe but I cooked this one without looking at the cookbook. I cooked it the way I was taught by chinese friends and it is very similar to what am sharing here. The difference is just the addition of parmisian cheese.
Ingredients:
2 tbs oil
1 small chopped onion
one clove garlic, minced
1 block of tofu, diced
3/4 cup fresh ripe tomatoes (cubed)
1/2 cup grated Parmesan cheese
1/2 cup grated Monterey Jack cheese, or cheddar or the like
optional-you can add a chopped green pepper or some chopped fresh mushrooms with the onion if you like (or both!).
Directions:
Heat skillet and add oil.
Sautee the onion and garlic til soft (and other veggie if you’re adding any…)
Add tofu and tomato sauce and stir.
Add Parmesan cheese and mix.
Sprinkle the jack cheese over the top and place the lid on the skillet, and immediately remove from heat.
Serve as is or sprinkled over noodles or rice.
